What on earth could it be? I've ridden the bloody thing FIVE times on non-threatening local trails. It's really cheesing my bell. Any ideas people? I know it's not unusual to have clicking and cracking but on a brand new Lapierre?

Obvious question. Roughly where's it coming from?
Old pedals?
Start at the pedals (cleats first) and work inwards, then backwards, then upwards from there

Front mech
Chain

Rear QR
Seaport
Seatclamp
Saddle
Etc
Etc
You gotta go logically not with gut instinct or you'll screw yourself into the floor as it's often something you've never thought of. Most obvious thing is front mech cable (if you have one) tapping on the crank.
Shoelaces against crank?

What pedals do you have on it?
Front mech cable bent outwards and clicking on right hand pedal crank?
Brand new Saints.
Coming from crank. At quarter past on the drive side. It's a beatch.
press it bb? Is it rocking in the frame? (oval recess)
does it do it when just turning gently or only under power?
1x or 2x crank?
BB is BRAND NEW and tight.
It spins silently until load is applied.
It's 2x.

Saint pedals are crap in my opinion, adjust the bearings and they would click after ten miles.
If you've got some other pedals swap them over and see if it stops.
Be surprised if it's not the pedals..
What torque are the crank pinch bolts done up to?
My bet is also front mech cable on the crank.
I had exactly the same with my canyon, took the cranks off, followed sram instructions on relubing and torque and it was gone.
Do you get a free service after a month from where you bought it? My cx bike did this, mentioned it to the shop during the free service, sorted and has never done it since. Still don't know what it was!

As I've already posted there's a process to follow, it doesn't matter if your a MILLION PERCENT sure you know. Been there with customers, most recently on a Cannondale Super Six
He was CONVINCED his BB was making a noise. He'd had another shop replace it. He wanted to put another one in. So when I took the crank off and flexed the slightly loose/dry spider interface in front of him he was astonished.
Had another one too. It's the bottom bracket. No. It's not. I did the rear QR up and the noise went away.
Are we understanding yet? 😉
I replaced the bb on my son's bike then discovered it was the mech hanger creaking. Every so slightly loose and totally dry.
I'm going to leave my home cold fusion kit alone for a bit and start looking for the breadbin that's caught somewhere betwixt the front and rear tyres.

Correct placing of spring behind ridge of rear skewer stopped a click once
As did tightening a rear spoke on another occasion
Replacement of pedals cured the clicking last year
This year its the clamp on my thomson seatpost - no grease needed on rails but buckets load in the plate recess
EVERYTIME I THOUGHT IT WAS THE BOTTOM BRACKET
I do have a very smooth and clean BB though
