Can someone please help.
I sold a set of brand new XT m8100 brakes. I have been told by the buyer they think my calipers are European spec because the hoses are on the other side of the caliper compared to his old brakes. I think his old brakes are a series older m7000 or m8000.
I have attached the picture for reference.
Im 100% all calipers are the same, the only difference between UK and EU spec etc was which lever controlled which brake, left lever front brake etc. The actual levers and calipers were indentical.
My caliper is on the left and his old one still attached to the bike.

No such thing as European spec callipers

You are correct. M8000 had the hose on the outside and M8100 have the hose on the inside, the side nearest the wheel.

Is he pulling your chain and telling you because they drive on the other side their discs are on the other side too?
Tell em they just need to swap the hoses at the lever end. Easy to do. And if they can't be arsed, to return them, refund them and sell them to somebody else!
Shimano recently switched sides for the caliper hose to improve cable routing. Most other brake companies already do it on the right side. Usually not a big deal but I do have a frame now that needs a very sharp bend to run a hose on the left.
