There is no problem bikepacking in Wales.
Wild camping is technically illegal but as long as you are sensible and stay out of sight there shouldn't be an issue.
I would also add that due to the disgusting behaviour of lazy ignorant people who are fly-camping there might be a bit more curtain twitching going on so pick your wild camp spot carefully, or book ahead at sites. And to echo the above non-permissive wild camping is technically illegal. So be smart and be tidy.

No, the outdoors is all open now. As long as you aren't rammed shoulder-to-shoulder one one of the popular beaches you'll be alright.
