Does anyone know of a good bike shop in Las Vegas. I'm best man for a stag do out there. Also any good riding that I could sneak off for a few hours?

get out to West Charleston and these guys are pretty good. It is a good way off the strip so you might need to sort transport / bus routes. LVC do rentals and Red Rock Canyon is where the bike expos do their demos - but again, own transport relly needed.
Can recommend Las Vegas Cyclery - very friendly.

I know of some very good "riding" in Vegas!!
Las Vegas Cyclery/Escape Adventures do half and full day rides, road or MTB, guided or unguided. I did a half day road around Red Rock Canyon, very pleasant and a break from the usual Vegas stuff.
