I have convinced Mrs Gummikuh that next years holiday will be on bikes.
I have a genesis longitude, which is perfect, but she will need something similar. But she wants a step through or similar in a Dutch style very upright, she also would like it with discs and decent gears, oh and fairly light and able to take luggage.

Or would putting a crazy long steerer on the cube really make it handle like a wonky shopping trolley?

It sounds like good advice, she already has three bikes, one a specialised MTB, which she hates, an electric bike which she loves, but would be difficult to charge, she also has a kona Africa bike for scooting about on, but it is exactly the right shape and size for her, but heavy, crap brakes and no gears.
She was a super cyclist, but cancer took it right out of her, hence the electric bike.
She can ride with me and see that better bikes ( I have a few) are so much easier to ride, better gears and frames.
I should point out she is German, and is no spring chicken, so has some quite strong views on this!
Before our lives changed we had spent many weekends away together and slept in bivvy bags, so no biggy for her.
We will probably start again easy, with a train down to the west country and follow our nose like before.
The gazelle already has a too far forward stem, and will cause her discomfort, she wants to sit on her sit bones upright.
I wondered whether the cube bike in my link with a taller steerer and shorter stem, with say some Jones bars, would be a nightmare to ride?

Ah, you may know this already, but GWR now require you to book your bike slot in advance - the days of rolling up at a station and almost certainly being able to put your bike on the next train have gone now.
No problem if you are planning something properly, but for those ad-hoc take a train-to-somewhere-then-ride-home kinda trips it's a PITA.

Pretty much the case with all the big operators these days and I would book well in advance to get the best deal anyway.
She basically wants a Dutch longitude, 29 or 27.5+ with rack and mudguard mounts, no heavy suspension, all in a female friendly package whilst sitting more upright Dutch style and able to cope with bumpy tracks without falling apart, and use decent tyres, no wonky odd sizes.

that's a quill stem, I'd reject it on that basis alone (but I'm not a tourer)
surely the answer is to get a frame to replace the specialized and cannibalise using the kona as a template?
Have a look at Thompson bikes in Belgium - website http://www.thompson.be/website/engels/sport-s8200e.asp looks like the spec you want.
They do the dutch style bikes and you can get advice from Hammersport.co.uk who have sold in the past and should be able to get one for you. There is a new official importer for the UK but only for the race bikes.
I have put loop bars on a few bike ,currently on a Fargo and they do make most bikes into sit up and beg(which is what I prefer!)
