So old bike is gone and I'm going to build a frame up but would like some opinions on my componant choice so far.
I'm 80-90% sure now that I'll go for a Bird AM9 once they have the coil in stock so its time to start ordering some parts.
I've still got some of the parts off the old bike to go on the new frame:
One up 170 v1 dropper
EX511/Hope wheelset
E*13 Chain Guide
Charge spoon
RACE FACE AEFFECT SL 170MM Cranks

Current component choices:
Frame: Bird AM9
Shock: RockShox Super Deluxe Coil Ultimate RCT
Front Tyre: Assegai WT 29x2.50" TR EXO 3C MaxxTerra
Rear Tyre: Minion DHR II Rear WT 29x2,40" TR EXO 3C MaxxTerra
Fork: Either a Pike or Lyrik Ultimate once they are in stock on R2-Bike
BB: XT
Headset: Either Bird own brand or Hope if I can find a decent deal.
Shifter: XT
Mech: SLX 12 speed
Chain: X01 Eagle
Bars: Undecided between Burgtec Enduro or spending a bit more on One Up Carbon
Brakes: Fancy a set of Hope E4 but at £385 all in I'm not sure yet.
What would you change or do differently and have I forgotten anything?

I'd be going full shimano or full sram, not a mix - you won't get the full hyperglide plus benefits with a gx cassette.
What colour am9? Aldi, If it's the red coil on the rear shock, then get the red lyriks to match, obviously 😁
And hope brakes are always worth it IMO.

Having just built a bike for my son the SLX 12 speed stuff is really impressive.
I'm normally an XT/XTR person but if I manage to get a new bike later this year I'd be happy with the SLX.
Why do you want the SRAM chain?
Regarding brakes there are lots of offers if you can find them on Hope. I got X2's for just over £100 each new.
Ebay is your friend on a build like this. A new set of Yari forks for £290 which I then put in a new £40 upgrade attune in from TFT. This also enabled me to change the travel.
Have you thought about joining British Cycling for a year? Although Evans stock is poor you get 10% off.
I looked earlier but can only nit pick a couple of personal preferences so left it. But since no one more knowledgeable has replied...
I like the DHR WT but find it rather draggy so only use it in the winter when I can appreciate the grip, for summer I go Minion SS but if I were buying now would think about trying a Dissector.
Re the handlebars, I have Burgtec to match my stem but would like to try the OneUp bars for a bit more comfort as I think the 35mm Burgtecs are rather stiff.

I bought them for a "dream bike" sort of build and preferred the shimanos I had before.
I do generally also use SRAM chains with Shimano drivetrains though, just habit from when Shimano didn't come with quick links
Yeah be aware hopes have a very different feel to shimano, which some hate, some love.
If you go shimano for brakes you can get a very clean bar too, especially if you get a compatible dropper lever. I don't think hope do an I-spec EV mount yet.

In a perfect world I would have gone full Shimano on the drive train but I've already got a brand new GX Cassette and the hubs have a xd driver and as I'm using the GX cassette I thought it was best to use a SRAM chain. I guess the idea would be some point in the future to replace the Cassette and chain with Shimano once they have worn out, although, I did run an SLX mech with Sram chain, chainring, shifter and cassette on my previous bike after my GX mech crapped itself again and it all worked fine.

Yeah I'm edging to a Lyrik but the Pike Ultimate is in stock at the moment. I've spoke to Dan at Bird and he was saying he runs a Pike and that the only difference really was the weight really.

Colour wise I really dont know! I like the yellow but I have blue hubs so that might look a bit crap, I can't tell if I like the grey or not and everyone seems to have the raw frame. Its a shame they dropped the blue or didn't just do one in black.
Why do you want the SRAM chain?
Sram cassette and raceface chainring not benefit from having a shimano one.

Nukeproof do nice carbon bars.
Get a Lyrik not a Pike.
Consider Exo+ rear tyre.
An odd mix of drivetrain bits. For me, I'd go Shimano only, either SLX or XT, but if you do go SLX, you're right to use the XT shifter to get multi-shift. Microspline wheels + Shimano cassette (10-51, or whatever floats your boat), in XT or SLX form.
For a chain, I'd be torn between the proper Shimano one and my normal choice of KMC as they now do 12-speed chains. Shimano ones use powerlinks now, so I'd have no concerns there. I have a Shimano one on my XT 1x12, but when it's due to replace, I suspect it'll be a KMC one that goes on...or whatever is cheapest that week 🙂

Fair enough if you have a new GX cassette, have you looked into selling it and getting an SLX cassette and hope microspline hub?

In that case, go for the grey as it has blue highlights to match your blue hope bits, but then red forks and coil might not look great .
Grey and blue is the best colour combo. Do that.

Yeah I think either the Grey or Raw but then get invisiframe to do some decals in the hope blue would be nice.

Ah, missed that bit, sorry! Yes, I too would go for Shimano mech and shifter over SRAM, based on the longevity (or distinct lack thereof) of the pivot bushes on their mechs. Good luck with the build 🙂

Brakes ...a very personal choice. Very much down to what feel you prefer. Functionally I like my 4 pot M7120 more modulation than the 2 pots not just more power

I alternate between a dhf and aggressor on the rear. I would hope a dissector be somewhere between the 2. Will probably get one when one of my current rears is done.

Dissector is great. Rolls well, corners, grips, brakes. All the stuff the Aggressor doesn't do.

Depends where you ride and time of year really.
Do you want one tyre to do it it all or are you going to want to swap?
This time last year I made the mistake of running a DHR/DHF2 combo at Inners... when mud spikes would have been more appropriate... (I had a MM/ I could have fitted but ...)
This time of year and if you are going to swap for winter I'd go for something more fair weather/faster if you are doing a lot of pedalling... if you want to keep the same then stay with a DHR or more agressive/softer etc.

Went with the hope e4s, Pike Ultimate and One up bars in the end! Just need to wait for the coil to come in stock with the frame to order it now.
God know when it'll all turn up as well. Anyone ordered from R2-Bike, Bike Discount DE or Winstaleys recently?
