Possibly due to not having lowered his saddle. Looks like he is too straight and rigid when the back wheel lands.
He has nowhere to go as the saddle is in the way. My simplistic take on it anyway.

I fancy he lost grip with his 'skyhook' pull-up, add that to near straight arms when the front came down and he's lost it.

As the landing wasn't flat, the front of the bike dropped further than he could reach. Ripping bars out of hands. Like others say, too rigid, too straight. Not that I can talk.

It's amazing how much momentum was in the bike - enough to grab a set of shorts and fling a full fledged adult through the air. Awesome.

As for why he let go of the bars, if you watch, the back wheel lands on a little angled ridge which launches the bike forwards, ripping it from his already locked arms. judging by the momentum described above, it must've been fairly fast.
