Decided to go 4 pot and have been running some sram code r currently but just dont feel as nice as previous 2 pot shimano deore 5100!
Thinking of either zees, slx or xt.

Question is, whst the advantage of a 7120/8120 over a set of zees?

I have always had slx and been happy with them. My ebike has xt and not noticably any better.

I've found that four pots have a less abrupt bite compared to 2 pots. Overall power is similar but the 4 pots have a bit less fade.

If you like a brake with bite then maybe 4 pots are not for you.

I prefer the 4 pots.

Given the choices, I'd go with Zees as the lever is waaaaay more robust than the newer 'upgraded' levers. Or just the MT520 / 501 combo which still avoids the newer levers.

(Or replace the Code R levers with RSC ones for moar power, more pad / rotor clearance and better lever feel)

XT are my fav. I love the agro bite a 2 pot gives to a fat tire.

The new dura ace are weaker braking power so less chance you lock up the skinny road tire. Makes sense but that is also why I use rim for road and disc for dirt/fat tires.

This is what I've bought to replace my Code R brakes.

Glad to hear they don't have such fragile levers @walleater - are you sure about that? I was getting alarmed having read some vague comments about new Shimano levers as these are for my big bike and more likely to be crashed.
