What's the difference between the 2 on something like a BB5/7?

Can I use a road caliper with a Speed Dial lever?

It's to go on my daughter's bike if that makes a difference..

different pull ratios - mtb levers pull more cable so mtb calipers have a lower-geared action

you could use road calipers but they'll not feel great (bit more snatchy but do allow bigger retraction of the "mobile" outside pad and I've used them on a winter ss - didn't really work though)

speed dial levers have a sort of pull adjustment, so you could set that to its lowest & see how it goes (I'm assuming you've already got the brakes)

Ah, that makes sense,

I've got the levers already so just looking to get a single front caliper as I have to run a V on the back..
