My bike is fitted with a 2.25 Hans Dampf on the front and a 2.25 Nobby nic on the rear.
I am finding them as draggy as hell and am looking to swap them out!
I would like to go for something with a bigger volume than 2.25 too.
Any recommendations on some grippy but faster rolling tyres please.
My all time favourite is an Eskar so something similar would be good !

There are plenty of fast rolling tyres out there, X-king 2.4 are may favourites, but not everyone likes Conti.
The rear tyre is about 2/3 of your drag and the Nobby Nic is a fairly fast tyre.
Just popped a Specialized Slaughter on the back of my bike and it felt good for both grip and roll.
Its quite loamy here, I felt it as soon as I came off the mud carpark onto the trail I almost stopped.
Ive had a 2.4 x king and a 2.4 mountain king on my old bike that was ok but thought I may try something different.
Aren't fast and grippy mutually exclusive? Tyres can't turn their grip on and off, so if it grips when you want it to it will also grip (drag) when you don't want it to.
Having said that, most drag comes from the rear and most of us are more worried about the front end sliding. So, fast rear and grippy front seems to work well, which is kind of what you've already got 🙂
You could go for something like a rock razor on the back (with very little tread in the centre, but more at the sides for cornering. Also look at compound (pacestar rear and trailstar front, for example).
I find with the nobby nic that if I run it to soft it squirms around but its horrible if its to hard.
There doesnt seem to be a good mid setting

I've got a Purgatory on the front of my bike & Sauserwind on the back. Plenty grippy enough for me.
I don't think they do the Sauserwind anymore though, so I'll probably be swapping to a Ground Control when it dies.
There seems to be quite a few threads on Spesh tyres at the moment; a lot of people seem to recommend Butcher up front & Purgatory on the back - for the sort of riding I do, I think a Purgatory on the rear would be overkill.
You mention something with bigger volume than 2.25....I think they all size up a bit differently, but I don't think Spesh tyres are particularly large, so they might not be big enough for you?

I think your definition of 'fast' may be some way off the mark.
Racing ralph and rocket rons are pretty rapid, furious fred if you don't mind the occasional slide
then Ardent, Aspens, Ikon, Larsen in descending order of tread if you like Maxxis

Spesh tyres used to come up massive, I remember a 2.3 enduro that was positively huge.

The Rock Razor is a pretty good tyre in the summer and is noticeable fasty than a Hans Dampf. I run a Magic Mary up front with either a Rock Razor of Hans Dampf rear tyre depening on the time of year. I'm more fussed about grip and find this suits.
I ran a pair of Minion DHF's on my old hardtail and they seemed to roll pretty quick and the grip was OK. My new hardtail has 2.2 Trail Kings which seem to be pretty good - they certainly grip better than the Mountain Kings that the replaced and don't seem any slower.

Fast for a tyre which isn't completely undergunned on a 6" bike and doesn't try to throw you on the ground at the first hint of mud/moisture. 😉
My hardtail has a Baron up front and Rubber Queen out back. My full-sus has a Minion DHR2 front and a Trail King rear. (RQ = old name for TK). If you're happy swapping tyres or getting very drifty at times then the Slaughter and Rock Razor look like they roll and corner (but don't do braking).
Spesh slaughter (grid) is a great tyre, cheaper than similar looking tyres and goes up tubeless nice and easy. Bit of a pain to get on rim initially if running a tube, had mine for several months and it still has plenty of tread after plenty of winter riding in the Lakes
