Not looking to go RTW, just the odd weekend away in summer. So, not looking at carrying much more weight, maybe 5-7kg ish.

All on tarmac.Tyres are 25's if that matters.
If you're staying on tarmac you'll be fine. Mate toured on his standard road bike last summer. I was on my cross bike with heavier tyres.
He punctured on the Sustrans gravel tracks though so if you plan on using Sustrans routes, you may want something more durable.
Aye, not a problem. Done LEJOG on 25mm GP4Seasons, carrying at least that much, as well as other short 3-4 day tours too.
I rode the devon coast to coast last year on 23mm , carrying large seatpack and rucksack and my fat arse 95kg , all worked out ok 🙂
Yep - we did Wales to Saintes, carrying 10-15kg each, on Genesis Equilibriums with 25mm Duranos. Absolutely fine.
I think you can get away with it but will be more comfortable of wider tyres and reduce risk of snapping spokes or ****ting your wheels.
I'd probably carry weight in a back pack rather than panniers so if you can protect your wheels more if you do find yourself about to hit a suprise pot hole.

Has anyone any experience of using one of those seat post mounted rear racks on a road bike with no eyelets?
To keep within thread topic I will be using 23-25mm rubber 😉
Basically for light 2 day ride where clothes etc are required for evening
For a two day trip I'd get an alpkit koala rather than pay for a seat post rack - I've done similar trips with an epic designs seat bag. You might only get to take flip flops tho!
As for wearing a pack instead, to protect your wheels, all your doing is putting the weight through your sitbones. It still acts on the wheels. For riding any distance I do all I can to move weight onto the bike.
The Koala was an option but the seat post mounted rack is about 1/3 of the price and looks to be fairly decent, I can strap any bag I fancy onto that I would have thought.
If you're travelling very light then one of those racks would likely work OK. You won't have the same issues that folk do off-road where the rough terrain tends to make them swing around.
I tour on Conti GP 4 Seasons 28mm. I off road on them also. I don't understand why people insist on making their tourers weigh 12 tonnes before luggage. Fan of drop bars, full 'guards and a Brooks saddle also.
