Merlin have some Shimano GRX 810 1x brakes/levers/groupset and an okay price, thinking of going 1x and swapping to these from existing earlier 2x Shimano RS685 stuff (and sellling this to offset) - does anyone know if the hydraulic brake hose fittings are the same? Might just save the cutting / internal rerouting hassle. Cheers

The ST-RS685 / BR-R785 came with BH59 hoses. All current shimano road stuff now uses BH90 hosing.

Neither the hoses nor the fittings are the same.

The hoses will work ok, the new ones bh90 are a slightly smaller inner bore, I’ve used the bh59 instead on one bike because I could be bothered to change the internal routing, cant really tell the difference.

You will need to use the new fittings.
