The leaf shape and red stems look like a Cornus of some type. Does it have white flowers in summer?
What 'shape' is the tree?
Its short, wider than it is tall.
Not sure about flowers, I havnt seen it in flower.

That would fit. There are quite a few different varieties from shrubs to small tress. Commonly know as 'Dog woods'.
Just my guess mind 😕 !

Looks like Dogwood [Cornus].
The clincher for dogwoods [and a good way to amaze and amuse kids] is to hold the two ends of a leaf and pull it apart so it breaks across the middle, but don't pull the two halves more than an inch or so apart. The air hardens the sap in the leaf veins almost immediately, so they go stringy and you can hold up one half of the leaf with the other dangling off it. Might be a bit late in the year now though, looking at the autumn colour on that one.
It's a Cornus (dogwood).
Dunno which one as I'm a taxonomic lumper, but I'm happy to say that it's a Cornus. Puts out suckers, which then pop up away from the primary. Good for making baskets, and will / should ( 🙄 ) take a decent spring pruning.
Generally gives a good bit of winter colour (from their stem), and can be coppiced over time to give that 'winter colour' more density/texture from the increased stems growing up off the stool.
I've got one that's about 10-11ft tall now (and yet more around), but it's still very easy to manage as it's only small hardwood. My LBB's love it, as the summer growth is pretty dense, which in turn, gives them good cover.

Well after the success last time I have one more that I just can't place.
I guess its some sort of Cedar, but none of them seem to fit 🙁

Nah, I'm out ... I wonder if it's a hybrid, grown as an ornamental?
This is where being a lumper isn't much help as I'd be happy with just 'cedar' (or even 'pinus' (even tho' that's not even strictly correct).
Any cones of any sort to help out?

Hmm yeah does look like a Wellingtonia from the pictures I can find.
Look to see if it's got spongy bark.
