I have an au pair who was asking me about what to study in terms of trying to find a good job/career. Best I could come up with was 'something you enjoy and find a rich boyfriend'.
Made me think, what would the right/serious answer have been?

Tell them there are no good options, then they wont be disappointed upon leaving Uni to discover that everyone has been lying to them about job opportunities for years.
