.... do they stretch/should they be snug in the toe?

Specifically, Mrs Kryton bought me some Shimano RO87's for Christmas. Having returned them once as they were two small, the replacements (45 not 44's) are just ok on length but if I wiggle my toe upwards it feels tight in there. I feel a 46'd be too big though (I'm UK size 10).

😳

I had the same problem with some Specialised road shoes in a 45. Very snug in the toe but 46 was far to big
I ended up getting 45.5 from the States.
They fell a lot better. And actually worked out the same price as I got them from the Specialized US website sale section.

If it doesn't feel right, then it probably isn't.

I find Shimano shoes in general too tight in the toe area, and i've heard others (presumably those with wide feet) say the same.

Maybe get a credit and try another brand, Northwave seem more roomy for me.

you're best going to an LBS and getting fitted properly with some proper advice from someone who can see the issues with the fit? As different shoes fit different feet!

Don't usually stretch. They tend to be built to resist flex and stretch.
