Can you actually run a 'proper' 35mm cross tyre in the back. And can you get 120mm q/r hubs that'll run a freewheel.

Yes and maybe

35c Ritchey Excavators - about 5-6mm room either side on the back.

This has an On-One 120mm fixed hub, but you can fit a freewheel on it.
Why the need for a quick release hub anyway?

depends on the tyre. My new pimpino would get a 35mm in but with the wheel near the front of the drop outs, it rubbed under load, about a mill on each side. I eventually replaced it was a 32mm because I got sick of the rubbing,
