How wide can you go and have it still cut through mud rather than wash out?

I wouldn't go wider than 38mm, there's a reason why CX bikes use 33mm as a maximum width.

I think the reason CX bikes use 33mm tyres is the UCI rules!

Do you want a cross tyre or a tyre that'll handle mud and keep your overall wheel diameter the same?
47mm WTB Sendeos are great in the mud.
