OK, I know the SLX shifters can be set to 3 or 2 chainrings. If I want to go for a higher spec shifter to suit the new Shimano XT double chainset will the XT shifters convert too?

Yes.. 😀 and XTR...
Edit...Allthough the xt m785 shifters don't come with the blanking plate to remove the gear indicator window, so you have to buy that separately as well...

I've got a brand new pair of 2012 XT M780 shifters still in the packaging if you are interested. They've never been fitted.
