Which would you choose for a new set of wheels? For Hans Dampf 2.35 or Maxxis DHR 2.4 tyres. Having never run 30mm rims before I need convincing that they are actually better!

More tyre support and lower pressures, BS.

I personally could not run lower pressure, and did not gain any support or grip between 30mm and 25mm.

Maybe 35mm would?

I have a set of 30mm internal DT Swiss wheels and they are pretty good but I like 2.3 maxxis tyres for the winter slop on the rear and the profile is really odd with these. Just bought a 25mm for the rear.

I'd go for 25mm and have more strength (or less weight)

Then I'd start thinking about 2.5WT or 2.6 tyres and whether they will be good and need 30mm or more. But for the tyres you state I'd stick at 25mm

I built some wheels up with some 30mm rims as it's all I could get in short notice with 28H before a race.

Do I go any faster than the wheelset with 22.5mm rims? No.
Can I run any lower tyre pressure without it feeling like sh*t? No.

haha yes 27mm would be perfect damn it! I'm going for DT swiss rims though so 25 or 30 are the only options. From responses so far perhaps I'll stick with 25mm. I have Arch Mk3 on another bike which I am perfectly happy with.. was just a bit curious if the wider rim hype had any meaning behind it!

There is a point where, for a given tyre, a rim can be TOO wide, but I can't remember the rational.

For a 2.35, the middle of Schwalbe's recommended range is 24mm from memory so 25mm would be my choice.

That's actually what I run to fit my front Hans Dampf (WTB i25) and it gives a seemingly excellent tyre profile.

I noticed a decent difference going from i19 to i27, but then those were super narrow.

Based on your tyre choice, you're pretty safe with either.

I run Hans Dampf 2.35" on DT Spline One XM1501 wheels with 25mm ID rims, profile is great IMO.
