As title, I have 25mm internal rims currently. Would it make a noticeable difference on the handling by going to a 32-36mm rim? Sidewall gives more stability.

Any options or real world experience welcomed.

I'am not a downhill biker. Trail biker.
I upgrade all my bikes to 25 mm internal rim right now...

Run 2.3 inch (Enduro-) tires and found - for trail biking - these match perfectly to 25 mm rims...

That's my trail biking wisdom. Guess not really a help for your downhill question...

Sidewall gives more stability.

What pressure are you running?

Probably best to work out what your trying to correct first an then work out if it's the rims that are causing it

loads of top DHers still use 25mm internal rims. you'll feel a difference going from 25 to 36mm for sure, you may well prefer it, but in reality there is nothing wrong with 25mm for us mortals. But if you want them get them
