Same price, same hubs, 25 drops some weight (c.75g over two wheels).
2.35s, maybe the occasional 2.2 on the rear (tho with vagaries of tyre QC these could end up being the same size). Second wheelset, first 30+ and robust for not racing.

I've found even 2.2's run better on 30mm's.
I went 30/30 for my lighter wheels, but I love ( relatively) fat tyres 2.6, and can't imagine running something as teeny as 2.35s
If its for racing and you run wee tyres then 30/25 would be my take. But TBH I think you should ignore me s I don't really have a worthwhile opinion and am only typing this as something to do whilst I eat my breakfast.
PS. Once my 'bleau state of exhaustion has passed, we'll go out.
I use 30's on my xc bike with either 2.36 Forekasters, or 2.35/2.6 ikons. It is right though.
I run 25's with 2.25" tyres on my XC (only) mtb, works nicely.
I’m running 28mm rims with 32mm tyres as the road set on the gravel bike. They work beautifully.
So 30mm for an MTB.
But I like wide rims and tyres.

25mm if you want to run 2.3s. Exactly what I do on the (trail) hardtail. Big bike has a 30mm on the front with a 2.5 and a 25mm on the rear with a 2.3 on.

About to order some wheels myself. XC, mix or racing and general riding. Moors, black trail centres. Don't tend to break stuff or shred tyres.
I'm going for 25. Rare I'd run anything bigger than a 2.3.
Not that long ago the rims I'm looking at were "all mountain" now they are xc. XM421.
There's quite a chunk of weight saving in these coated to the 30mm equivalent because they are sturdier rims. When you get into the xc specific ones, less so.
75g over both wheels is nothing. Probably see that in natural varience between parts.
Take my advice with a massive pinch of salt. I used to run a 2.4 on a mvic 717 on my singlespeed!! 17mm internal is narrow for road these days!
Ive run 30s for a long while, currently on 25s for weight saving. I cant say I can really tell the difference in terms of grip etc, but the 25s are definitely lighter.
Depends on the tyre size too I guess. Im sticking with 2.4 or lower on these 25s.
Lightweight XC tyres need all the support they can use, so wide rims make even more sense there than for enduro and such applications.
The pros are using 2.4s on 30mm rims even for long distance stuff like the Cape Epic.
Been running a 2.4 Rekon Race on a 30mm rim on the rear and the thing is fast, bonkers fast
Pacenti TL28 on the hardtail, 30mm internal things on the FS. 2.4 conti trail kings apart from a 2.3 ground control on the back of the FS which isn't as tall as the TK so fits in the chainstays.
Both wheelsets with beefyish hubs come in at under 2kg without tyres. I don't race any more (and was rubbish when I did) but I'll not go thinner than 30mm internal now. Running narrower rims in the past I've noticed a bit of a wiggle if I corner hard enough to be going at a decent speed. I build my own wheels, so it's not a tension thing as far as I know. Both wheelers are 28h 29ers and I've had wigglier 32h 517 and 521 26" hoops.
As zezaskar says, they feel fast and to me a lot more stable. I don't have to think about them, and I've certainly spent time thinking about lighter, narrower 32h 26" wheels.
I have 25s…they are too narrow for my Barzo 2.35, causing the profile to be too round.
