Is it worth just getting hold of some old XT cranks and buying a new cog and BB or is there a better option?

What do you mean by 'is it just' Middleburn? There are myriad options for singlespeed cranks.
If I were buying now and wanted a 32t ring I'd get XX1 cranks, which are pretty good value frankly. Even factoring in a different sized chainring they're not crazy money.
Depends what you want from a crank really?
I'm using an SLX 9sp triple and a single 32t 9sp chainring with no ill effects.
I do have a 3x10 M770 XT chainset to offload though if you're considering secondhand (sorry for the plug!)
