Hi, I know nothing about computers and my lad has seen one that he thinks is good from Novatech for £599.

Personally I'd go for an Intel chip like an i5 rather than an AMD, even the new 6 core ones, but that's me. For gaming the GFX card is much more important though, and the 7850 in that will be capable of playing most games on very high settings.
Price seems ok too, but suspect if you really tried (and possibly built yourself), you could get as good performance for slightly cheaper.
Yeah having a higher processor speed is better than having more cores when playing games. The new bulldozer processors have a weaker performance in comparison to the i5. The 2500k i5 is the best processor on the market at the moment for gaming, it has almost identical performance to the i7 2500k.
The new ivybridge processors have just come out which are even better than the sandybridge ones. Look for a i5 3570k if it is within budget.
If you can try and get them overclocked. I run my i5 at 4Ghz but I can run it at 4.7Ghz but have never needed to as the power it runs at the moment is more than enough for any games I play.
You don't really need a 750 watt power supply unless you think you are going to crossfire with two graphic cards. Possibly downgrade it down to a 650 watt and spend the saved money on 4 more GB of ram?
go for an i5 2500k build, and for £600 you could build something better yourself. It isn't hard - much like building a bike. Lots of components and fun putting together. it's also cheaper than buying a prebuilt - unlike bikes.
Novatech are a local company (down near Port Solent/Portsmouth), they are gaming oriented and usually have pretty competitive prices. Anything they sell you should be well nailed together and up to job.
Buy one of their i5 offerings and you won't go far wrong.
I reccomended Novatech to my mate after a gaming laptop. He's really pleased with it! My bro's had one from them too and can't fault it.
