As someone who tried Sram double-tap for the first and only time so far, for ~1 hour on a turbo at Halfords (Boardman CX Team) in early 2017, I know options for me as a Shimano user are practically non-existent these days for £1k. Thankfully, I grabbed a carbon framed, 105 with hydraulics a few months later for just under £1k.

Is it for commuting?

Wilier Jaroon/Jareen might be suitable despite being 'adventure bikes'?

I got a Jaroon with Rival 1x11 for £1300 at CRC reduced from over 2k.

I put some 32mm mixed use tyres on and it's good to go as a commuter. Has mounts for mudguards and rack.

Not a light bike but I don't mind for what I need it for.

Canyon Grail AL? Might have to wait until next year though to get one.

Pinnacle 'arkose' or 'pyrolite' to suit budget...

Watching the thread with interest, but I really like the feel of plastic bikes.... my dirty disco is a bit borked now and I need a replacement that takes proper guards and is nice to ride.  And ideally low maintenance.

Doe such a thing exist.

. How much do I need to pay to get into carbon fibre territory?

The DD was only 800 but no mudgysrd mounts.

Build your own?

I got a Ridgeback Advance 7.0 brand new for £500, when bits started dying all at once, both wheels, chain, cassette, chainring,, front brake, I decided to upgrade it. Hope front wheel, Di2 Alfine and Ulttgra hydro discs for about £700.  I recon could be done with a decent second hand frame/fork/bars/seatpost/seat and my upgrade bits for well under a grand. It's a really heavy frame, tempted to swap for a Roadrat one day, can get those F&F for well under £300
