One bike has a new std 142 x 12mm thru axle, my other bike has a normal 135 x 9mm QR axle.

If I purchase an adaptor kit for my Hope Pro II rear wheel to allow it to fit the 142 x 12, will I be able to swap wheels about without having to adjust the derailleur limits ?

Swop between the two by swopping adaptors. Yes. 142 is the same as 135 but with 3.5mm either side to make a positive dropout engagement without fiddling with a 12mm axle a bit like your front forks have with 15 or 20mm. Wheel/hub alignment and thus cassette location doesn't change.
