I think I know the answer to this but can't seem to find a definitive answer, so looking for some help...
Will a 12s Shimano shifter work with an 11s Shimano mech and cassette. I know both 12 & 11 speed shifters have the same pull ratio, so can't see why not. TIA
The cassette pitch isn't the same, so you'll be short shifting every time, you'll be half a gear out by the time you're trying to shift to if that makes sense?
I'm theory a 12s cassette and shifter with an 11s derailleur would work though I doubt the mech would have the capacity for most 12s cassettes.

As above. The shifter and cassette need to match. The shifter is in charge of how much cable is pulled, the cassette is the reason that amount needs to be pulled. The 11 and 12 speed mechs have the same response to cable pull so are interchangeable.
Once, there were lots of after market cages for 11 speed mechs to allow them to run on cassettes larger than 42 teeth. Most of those have gone away now because 12 speed mechs achieve the same result.
