Is an 11 speed cassette (that is non XD), likely to fit on my old Sun Rinlge Disk Jockeys (circa 2003)? I know on road stuff freehub bodies got slightly wider to accommodate 11 speed, is this still the case with MTB? Thanks

11sp Shimano fits on normal freehubs.
SRAM needs XD

MTB 11-40/42/46/50 and Ultegra 11-34t all fit 8/9/10 speed freehub bodies.

Yup - the defining factor is the smallest sprocket. 10T needs an XD driver, 11T goes on a standard freehub.
