Have a very well used Pinnacle ramin 3+ that I've used for bikepacking trips since 2016, its getting very tired now , so time to strip, new paint colour and new group set , The old 10 speed deore has been faultless over the years , so deore is going back on, so question is , 10 11 or nice up to date 12 speed ... either way the cassette will be a 11-46T or maybe a 50T

Range, if you need 30front x 50rear for climbing and more than 30 x 11 for top speed then you probs need 12 speed so you can go 30 x 10 (or something else x 10). For many 12 speed is pointless because top speed is the last of our problems, its climbing, so a 30x50 10 or 11 speed will do it.
I would go 11, only because I think 10 will become less available so choices limited.
Plus deore or xt 11 speed have both been mega reliable. I have 5 year old xt chain, mech and sprockets that refuse to die, chain is well beyond wear limit, but it all shifts perfectly, even with a few teeth missing off the cassette.
If you'll spend a significant amount of time on tarmac then smaller jumps between the gears might be a nicer thing to have. I wouldn't take out an extra mortgage for it or anything though.

I'm not a cycling or engineering professional, what do you mean by bigger and smaller?

Yes, bigger gear or bigger ratio (size of front chainring divided by size of rear cog), i.e. you go further for every pedal stroke. It sounds counterintuitive because the bigger "physical" gear is obviously the 51 tooth cog but that provides the lowest ratio or the easiest pedalling. Maybe a less confusing terminology would be "easier" and "harder".
OP - I'd probably go 11spd but it might also depend on what you have on your other bikes. Having them all 10spd or 11spd means you can keep a chain "in stock" and it will be fine for all the bikes.

Thats kind of what im thinking, my road bike, gravel and this will all be 11 speed then, just my fat bike then that rocks 2x8 speed 🙂 ...

I've the same bike, possibly the best £ to fun ratio bike I've ever owned. Actually no possible about it. I swapped out the 32 ring for a 30 and the 11-36 cassette to n 11-42. That gets me up anything now but I'm going to get away on it next month carrying kit ans I think that'll help me decide whether to go 11 or 12 when things need replacing. I'd not want bigger gaps in the gears so if 1 more gear to 46 seems enough I'd go 11 speed but if I was wanting to go to 50 I think I'd want 12 speed. I'm not sure if the hubs will take an XD driver or a Microdrive but 30 x 11 is high enough for me.

I went for 10 speed Deore on mine because I built it on a tight budget and that's what I had in the spares box. I paired an 11-42 cassette with a 24/38 double chainset to give a wide range of gears.
Not used the bike for bikepacking yet but I'll be doing the Moors100 on it.
That 11-51 11s deore cassette looks like a good choice to me. I think I’d have put that on my fs when it jumped from 10 to 12s if it had been available
I still think 11 is the sweetspot. I've built a few bikes recently and I tend to prefer 11 over 12.
12 generally has a wider range, sure, but if 42t or 46t out back is fine then 11 is less sensitive to setup. 10 doesn't have the range and is getting harder to source, so that's out.
Ended up going 11 speed deore, mech, shifter, 11-50 cassette, kmc chain, all be here in a few weeks from ching chong 🙂
The bike has cost me virtually nothing since I bought it, so a new powder colour and some nice new running gear and it'll be happy for a few more years dragging me around the country side

That was my plan, but doctors orders are too stay off the bike at the minute until ive had further heart/artery tests !
Ive emailed Si about the Moors 100 a few times now and heard nothing back? ... Not seen anything official to say its back on except the comment on bearbones ! ... I still might turn up yet and hopefully not keel over doing it !

Use a non shimano 12 speed cassette from the likes of sunrace or sunshine etc, 11-50/52T fits on a standard hub etc :)... Looking between £25-40 delivered from aliexpress

That's the most likely route I'd take stumpy, the 11-42 I have is the Sunrace one as it was a bit lighter than the Deore option. Only reason I was wondering about the freehub is that it it would give the option of some lighter cassettes the difference of which I'd never notice 😀
