Are the SRAM/Shimano 10 speed cassettes interchangeable between MTB and road wheels?
I am looking to use a 11/32 MTB cassette on my road bike for some hilly touring.

It will fit on your free hub but your road mech won't cope with that size cassette

a short cage road mech may struggle with that range, but the cassette will go on the wheel ok.

Generally yes but there are exceptions, Ultegra road wheels only take Ultegra cassettes for example as the splines are higher. You'll probably need a longer rear mech.
