I am converting my non-boost 2013 Giant Anthem from 3 x 9 to a new 1 x 11 set up. I'm ordering some new 175mm cranks and believe I need a 49 to 50mm chainline ? Sound about right ?

Would a boost 53.4mm chainline work fine on a non boost wheel ? or would this put too much lateral tension on the chain ? measuring the chainline using the middle chaingring on the 3x9 seems to put it around 53mm.

I'd expect boost chainline on a non-boost wheel to be awful. It'll be noisy in lowest gears and jump down the cassette if you back pedal.

Standard chainline is already quite a long way outboard of the middle of the cassette. Non-boost chainline on a boost wheel works nicely as it puts it closer to the middle of the cassette.

Why not just use your existing cranks? Tune chainline with spacers if you feel the need.
